To have a runway on a roof, that building must be really huge.

Doesn't need to be much larger then the deck of a aircraft carrier, catapults will do the rest.

even so, the plane dips after it takes off. unless of course all the aircraft is VTOL, those buildings are going to be really huge

The building height is visibly more then that of a carrier deck and it's very rare a plane dives into the water/crashes when fired off with catapult assist.

If the structure allows for it, you could do the same from a decent size apartment building, provided it can hold the added weight.

True, there's few crashes into water, but they dive a bit. that's because the pilot blacks out for a brief amount of time, and the plane drops during that process, its just that usually they dont crash because they're pulling up with all their might.

Also, no, an apartment building is way too small. Catapults aren't a problem solver, it just helps the plane get a little extra momentum, but to take off from a building roof that small you NEED VTOL. Runways are always several thousand feet long.
